Vegan Sunburgers for your Meatless Monday.

While the “Meatless Monday”  concept has been around since World War I, the contemporary initiative began in 2003, creating a global outlet to share information relating to the health and environmental benefits of reduced meat consumption. The evidence that a more plant based diet promotes health is getting stronger. That information, coupled with growing concerns over the greenhouse gases produced in raising cattle, have resulted in Americans markedly cutting their beef consumption in the last decade.

If you decide to go meatless 52 days a year, for whatever reason resonates for you, here’s one of my favorite plant based recipes that is delicious, filling and will be that “gotta try” alternative for BBQ’s, cook-outs and “burger nights”, all year long. Enjoy!

Meatless Vegan Sunburgers Ann BorochVegan Sunburgers

8-10 Servings


1 cup soaked sunflower seeds (soak 4 – 6 hours if possible)

1 cup soaked pumpkin seeds (soak 4 – 6 hours if possible)

¼ cup sundried tomatoes (no sulfites) in oil

1 cup grated carrot

¼ teaspoon sea salt

1 teaspoon chili powder, optional

1 teaspoon Italian herbs

½ teaspoon chopped garlic

3 tablespoons olive oil


Preheat oven to 350 degrees F. Rinse and drains seeds and nuts. Place all ingredients into a food processor and blend until a smoother batter is formed, scraping down sides occasionally. Form the batter into patties and place onto a baking sheet lined with parchment paper and sprayed with olive or coconut oil.

Bake for 20-25 minutes, or until patties look golden brown. Remove from tray and let cool on cooling rack. Serve on a lettuce wrap, sliced avocado, red onions, and top with homemade ketchup.

Homemade Ketchup

1-2 Servings


¼ cup organic tomato paste

1 tablespoon raw apple cider vinegar

4 drops liquid stevia (Kal Liquid Stevia)

¼ teaspoon sea salt

¼ teaspoon pepper

3 – 4 dashes hot sauce (Brother Bru Bru or Organic Harvest Foods Arizona Peppers hot sauce, optional)


Combine all of the ingredients in a bowl and whisk with a fork. Enjoy with sweet potato fries or on a burger.
